Vermont Fresh Network Forum

Sunday night with help from a babysitter and relief milker we were off to Shelburne Farms to participate in the annual Vermont Fresh Network Forum.    The Vermont Fresh Network is a network of handshake agreements between Vermont farmers and chefs.   The annual forum is when food producers and chefs set up food tables offering tastes of the local eats for the foodie public as well as each other.   The speaker this year was Dan Barber of Blue Hill.  He spoke about visiting the farm of foie gras producer Eduardo Sousa in Spain who managed to produced excellent tasting foie gras without gavage.   Link to article on expatica.com:  http://tinyurl.com/5jcvmd

I think it is only fair to tell you that I just ate a $3 hunk of Tome and all I want is an entire wheel! By far, the yummiest! I love the flavor and the hardness, as well as the mold!! Beautiful!!
